Cosmic Cuisine: Stargirl Sugar Cookie Sandwiches

Stargirl is one of the sweetest superheroes that’s ever graced the DC universe. With her show returning to the CW for the fall season and the first two episodes (“The Murder” and “The Suspects”) having already aired, I wanted a sweet treat to munch on while watching. These red, white, and blue sandwich cookies are perfect. My kids had a blast making them with me (and eating them!).

These red, white, and blue sandwich cookies are every bit as sweet as Stargirl and their great taste will bring any villain to their knees!

We started off by mixing up the dough. As always, I used my handy stand mixer to make the base dough. If you don’t have one, no problem, it just means a little more elbow grease. We mixed the food coloring in by hand. It took a bit of effort but we made it there in the end.

In order to achieve the deep colors I wanted instead of pastels we had to use a lot of food coloring but it didn’t affect the flavor and it was worth it for the awesome visual of the finished cookies. The more you mix the dough, the more smooth and consistent the color, as seen with the red. However, if you prefer a more marbled appearance like the blue dough, there’s no need to mix the dye completely in.

As with most baked goods, it’s really important to keep the dough chilled. This is because of the butter. Warm butter makes runny dough that will spread too far. When the dough spreads there are three main problems: First, the dough will be sticky, making rolling and cutting the cookies difficult. Second, with shaped cookies, the shapes will be warped or off instead of having crisp, clear shapes. Finally, the cookies will spread too thin and cook too fast, resulting in burned cookies. So place the dough in the fridge between each step and especially right before going in the oven for the best results.

Now when it comes to baking, don’t overbake the cookies! The cookies for the Stargirl sugar cookie sandwiches are meant to be soft, over baking will make them hard and when you try to eat them the filling will squirt out the sides.

It can be a little difficult to tell if the cookies are done just by sight because of the coloring so gently touch a cookie to check for doneness. If the cookie is easy to push and doesn’t feel raw then take them out. It is best to err on the side of caution because the cookies will continue to bake on the tray for a few minutes as they cool.

Make sure to fully cool the cookies before trying to cover them with the buttercream filling. If the cookies are even a tiny bit warm then the filling will melt and run out of the sandwich. The cookies will also bend and break if you try moving and stacking them while they’re still warm so give them plenty of time to cool, preferably on wire racks.

Usually, I say that cooking is an art but baking is a science. Take any liberties you want when cooking but stick to the recipe when baking. However, this frosting is an exception. If the cream is too thin, add more powdered sugar. If it is too thick add a little milk. Just be careful, a little liquid goes a long way with this frosting. You can also add more or less sugar for your own personal sweetness level, just taste as you go!

This buttercream frosting recipe is also great for the top of cookies, cupcakes, and cakes. It can be dyed any color with just a little food coloring. It is also easy to change the flavor by using different flavoring. Just be aware that you may need more or less of different flavorings because different extracts are different strengths. Just take it slow and taste it often until it is perfect for you!

If you don’t have a piping bag just use a plastic storage bag. Pick a bottom corner to fill towards and twist up the bag like a piping bag. If you don’t have a piping tip, that’s okay too, just clip the corner of the bag and squeeze. It won’t make the same pattern with the filling, but it will fill the cookie just fine and that’s the most important thing.

These cookies were fun and easy to make and they looked amazing when we were done. The colors were vibrant and completely reminded me of Stargirl. A plate of these will look great sitting out at any viewing party or on the counter waiting as a special treat for the kids while they watch Stargirl kick butt.
